Roasted Squab with Honey Orange Glaze

Serves: 4
Prep Time: 15 Minutes
Cooking Time: 35 Minutes

Glaze Preparation
Whisk together honey, orange juice concentrate, ketchup, and salt. Bring to a boil; simmer for 5 minutes. Chill.

Squab Preparation
Rinse and dry Squab. Lightly salt inside cavities. Roast in 425 degree oven for 15 minutes. Reduce heat to 375 degrees and continue roasting until done (approximately 30 more minutes), basting often with Honey Orange Glaze (recipe above).

Serving Tips & Suggestions
Place a Squab on each plate and garnish with radicchio, orange segments and orange peel.
